Jazzed Up Green Beans

Ingredients:

  • 1 ½ tbsp olive oil
  • 2 cloves garlic, minced
  • 1 ½ cups red potatoes, chopped
  • ½ cup celery, chopped
  • 1 jalapeno, seeded & diced
  • 1 pound green beans, fresh & trimmed
  • 1 tsp Slap Ya Mama Hot Blend Seasoning
  • 1/3 cup water
  • 1/3 cup cilantro, chopped
  • 2 cups tomato medley, peeled & chopped

Directions:

In a large skillet, heat olive oil over medium heat.  Add garlic, potatoes, celery, jalapenos, green beans and Slap Ya Mama Hot Blend Seasoning; sautee for approximately 1 minute.  Add 1/3 cup water, cover and cook for 5 minutes or until green beans are crisp-tender.  Stir in cilantro and tomatoes; cover, reduce heat to simmer and let simmer for about 5 minutes or until tomatoes soften, stirring occasionally.  Serve and enjoy! To Peel Tomatoes:

With a sharp knife, cut an “X” into the skin of each tomato.  Drop tomatoes into a pot of boiling water for about 30 seconds.  Remove from boiling water and immediately place into a bowl of ice water.  Let sit in ice water for about 1 minute and then peel skin off tomatoes.
